Exclusive Wine Chemistry Class
Do you know your terpenes from your thiols? Your polyphenols from your pyrazines? This is a note to gauge your interest in a one-of-a-kind wine course that will cover a critical, but often overlooked (or avoided) component of wine knowledge: wine chemistry. I have invited highly respected Université du Québec à Montréal (UQAM) professor, Benoît Marsan, Ph.D, to deliver a two-day deep dive into everything you’ve ever wanted to know about the chemistry of wine, for beginner’s or seasoned professionals, in Toronto. Prof. Marsan has been delivering this course in Montreal for several years, and everyone I know who has taken it (including top Canadians Véronique Rivest, Elyse Lambert, MS, Carl Villeneuve-Lepage, Nadia Fournier, among others) have raved about it, calling it ‘essential learning’ for anyone in the wine trade. We are looking at dates in the fall, likely a Wednesday -Thursday or Thurs-Fri in October, in the tasting lab at George Brown College. The course will be limited to 50 students (49, actually, because I’m taking a seat!). Lectures are accompanied by wine tastings to demonstrate each concept. The cost of the two-day course will be $220 + HST, all in, and the course will be in English.

This will fill up quickly; if you’re serious about wine, don’t miss it (and don’t worry - there’s no test afterwards!).
